Tasty tamales and ramen dishes will be the norm in restaurants across the country as the season heats up, but a little bit of a change is required to ensure you’re not spending your money on a bad one.

Make a tamale batter from scratch1.
Put the tamales in a large bowl and cover them with boiling water for 20 minutes.
Add the sauce and mix well.2.
Heat the oil in a heavy skillet over medium-high heat until it reaches 400 degrees.
Once hot, add the chicken, garlic and onions and cook for about 10 minutes, until soft.3.
Add in the pork, red pepper flakes and salt and cook about 10 more minutes.
Add in the tamale sauce and cook another 5 minutes.4.
Add your flour, salt and soy sauce, cook until combined.
Add some water if needed to thicken the batter.5.
Place the bowl of tamales into the refrigerator for at least 1 hour.6.
When ready to serve, remove the tamalade and shred with two forks.
